We make 100% whole bean, all organic chocolate. That means all the amazingly healthy parts of the cacao bean are in our products. All of our beans are sourced directly from the indigenous tribes in the Talamanca region of Costa Rica. This is a beneficial situation for both the cacao farmers and us. We receive top quality, organic cacao beans and they are able to sell to us at more than double the price they would otherwise receive. This standard of paying more than fair trade price means their families and community can thrive and grow instead of just subsist. The chocolate made by Captain’s Chocolate Co. is 100% handcrafted in small batches. This means you receive all the benefits of the whole cacao bean in every bite.
We complete the bean to bar cycle by first purchasing the organic cacao beans from indigenous Costa Rican farmers. Captain’s Chocolate Co. ferments, dries, roasts, hews, and winnows the beans, which produce cacao nibs. The nibs are then stone ground in small batches, usually for about 30 hours. Organic cane sugar is added during the grinding. The chocolate is then aged about 4 to 6 weeks. When ready it is tempered, molded and packaged.
Nothing is stripped away from the cacao beans. Anything added to the chocolate recipe, organic sugar or organic flavoring oils for example, are selected with utmost care in order to always compliment the richly valued natural elements of the cacao beans.
